Pineapple Ham and Yams

Rich enough to be dessert, yet high in vitamins, this one-dish meal is perfect with any green vegetable and bread.

Serves 4

4 slices thinly sliced cooked ham
1 tablespoon butter
1 cup of mashed yams or sweet potatoes (fresh or canned)
1 tablespoons brown sugar
4 slices pineapple (fresh or canned)

Topping:
¼ cup brown sugar
¼ orange juice or apple juice
¼ cup pecans

Melt butter in 1-quart casserole dish.

Add mashed yams or sweet potatoes and stir in 1 tablespoon brown sugar. Top with sliced pineapples.

Combine pecans, brown sugar, juice and pecans and mix well. Spoon over yams and pineapples.

Cover lightly and microwave for approximately 3-5 minutes.
