NC BBQ Sauce

A basic NC BBQ Sauce.

2 quart container apple cider vinegar
1/4 cup salt
1 tablespoon cayenne pepper
1 tablespoon black pepper
1 tablespoon paprika
3 tablespoons red pepper flakes
1 cup light brown sugar
1 tablespoon hot sauce
A large kitchen funnel helps.

Set aside about half of the vinegar. Leave the rest in the jug the vinegar came in. Using the funnel, mix the brown sugar, salt, cayenne pepper, paprika, red pepper flakes, and hot sauce in the jug. Pour the set-aside vinegar back in the jug. You won't be able to fit all of it back in the jug. Cap it. Shake it a little. Let it sit at least overnight before using. The longer the better.

Tips:
1. To soften brown sugar that may have gotten hard in the fridge, put in a bowl with a slice of bread and microwave for 30 seconds. Get rid of the bread.
2. If you have a jug that's bigger than 2 quarts, you could make it in that and fit all of the set-aside vinegar in it. It should still be good, if you do this. I've never tried, but I believe that a 2 liter bottle is slightly bigger than 2 quarts, though my metric skills aren't real sharp. When I make it, though, I just save the leftover vinegar for something else.
