That's a great idea! I have heard of the NC State BBQ camp (contact the North Carolina Meat Processors Association (NCMPA)) but really don't know much about it. I did a search and as you mentioned it's pretty popular and more of a lottery to get in but looks to be a great education for those that gets accepted. I have not heard of the ...
